Everybody loves baked chicken breasts. Here is a simple recipe to make delicious, juicy and healthy chicken breast dish using your convection oven.

Step 1: Prepare the chicken

Using a mallet pound the chicken breast to that they become of uniform thickness. Fill a large bowl with warm water and add some salt to it. Mix it until it dissolves completely. Now take your pieces of chicken breasts and add them to the bowl. Let it stand for 15-20 minutes. This will ensure that your baked chicken breast will come of out oven juicy and soft.

Step 2: Grease the chicken

Skinless chicken breasts have very little fat on it, so there is a chance of overcooking and it becoming very dry, so it important to grease the chicken breasts. Heat some butter until it is fully melted. Brush the chicken breasts liberally with butter. A butter coating will ensure that your chicken comes out of the oven with a golden crust full of great flavor.

If you prefer to have healthier alternatively use olive oil instead of butter. Ensure that the coating of oil or butter is done on both sides as it will help the seasoning to stick to the chicken and also the chicken will not stick to the baking tray. You may also use place some foil in the baking tray to chicken sticking to the baking tray.

Step 3: Seasoning the chicken

Place the chicken breast on the baking tray. The best chicken is baked with very few spices. Take some salt, ground black pepper, garlic powder and paprika powder. Sprinkle this powder mixture on the chicken and rub it in the breast pieces with your fingers, so that it coats them evenly. Ensure that both sides of the chicken breasts are coated with this powder.

Step 4: Bake the chicken

Now there are two ways to bake the chicken breasts. High heat, quick baking, or lower temperature and longer cooking.  I prefer the former method.  This makes the crust golden. Turn on the oven to heat it to about 450 degrees F. Now place the baking tray with chicken in the oven and set the cooking time between 15 to 20 minutes.

Use a kitchen thermometer to check the inside temperature of the chicken. It should be around 170 degrees F.  If it is less then give a couple of minutes more baking time.

Step 5: Rest the chicken

Do not cut the chicken right away. Let the chicken rest outside of oven for about 10 minutes. During this time the chicken will continue to cook in the residual heat while retaining all the juices.

Step 6: Cut the chicken

After the resting period is over, you can cut the chicken what way you like. You can slice it, shred it, dice it or even serve as a whole.

Step 7: Serve it

Your chicken is ready now you can serve it mashed, fried or baked potatoes or with any other vegetables or rice.
